Tequila Lime Shrimp Tacos

My wife sends me alot of pins from Pinterest and as she can attest to most of them go unused…until now.  I made a few changes and also added a Sriracha aioli as an additional sauce.  I made four total ‘sauces’, if you include the marinade and slaw dressing, which can be a bit much.  The aioli is a nice-to-have for this recipe but it’s always good to make it and store it for other recipes.  The original recipe called for a long marinade time however due to the fact that lime juice can cook the shrimp I opted for only 30 minute marinade time and it worked out great.

Ingredients

  • ~1 1/2 lbs shrimp, peeled and deveined
  • Marinade:
    • 1 tsp salt
    • 2 tbsp honey
    • lime juice from 2 limes
    • 1/3 cup tequila
    • 1/2 a medium onion, diced
    • 1/4 tsp ground cumin
    • 1/4 tsp chipotle powder
    • salt and pepper to taste
  • Slaw sauce:
    • lime juice from 2 limes
    • 2 tsp dijon mustard
    • 1/3 cup olive oil
    • salt and pepper to taste
  • Chipotle crema:
    • 1 cup sour cream
    • 2 chipotles, chopped + adobo sauce (only 1 chipotle unless you like it hot)
    • 1 tsp honey
    • salt to taste
  • Shredded red cabbage
  • Tortillas
  • Avocado, diced (garnish)

Directions

  1. Wash, peel, and dry the shrimp.  Once dried, season with salt.
  2. For the shrimp marinade: combine honey, lime juice, tequila, onion, cumin, chipotle powder, salt and pepper in a medium sized bowl.  Once well mixed and the seasonings are dissolved, add the shrimp.  Cover and marinate for 30 minutes in the refrigerator.
  3. For the slaw dressing: combine lime juice, mustard, salt and pepper in a small bowl.  Whisk the dressing while slowly adding in the oil so that it emulsifies (or you can do this in a blender). Set aside while the shrimp marinates.
  4. For the chipotle crema: combine the sour cream, diced chipotles, adobo sauce, honey, and salt.  Set aside while the shrimp marinates.
  5. Once the shrimp is done marinating, grill for 3 – 4 minutes, turning once, or cook on the stovetop 4 – 5 minutes until cooked through.
  6. Place the shredded slaw in a bowl and toss with the dressing until it is fully coated.
  7. Chopped the cooked shrimp and serve with the slaw, crema, avocado and tortillas.
